あああ、そうですね。-l と -m　を勘違いしてました。
手抜きしないでちゃんとmanを読むと。

The following statements are true only if either
/usr/bin/sh or NULL is named in the specified user's pass-
word file entry. If the first argument to su is a ' - '
(dash), the environment is passed along unchanged, as if
the user actually logged in as the specified user. Other-
wise, the environment is passed along, with the exception of
$PATH, which is controlled by PATH and SUPATH in
etc/default/su.

次の説明は、指定したユーザーのシェルフィールドに /usr/bin/sh
が指定されているか、または何も指定されていない場合にだけ有効
です。su の最初の引数に - (ダッシュ) を指定すると、指定した
ユーザーとして実際にログインする場合と同じ環境が渡されます。
最初の引数に - (ダッシュ) を指定しない場合、$PATH 以外の環境
が 渡 されます。$PATH は /etc/default/su 中で PATH と SUPATH
によって制御されます。

ということで、-　を指定しなければ、$PATH以外は引き継がれます。
su -m をしたいときは(*BSDやLinuxと同じ挙動にしたいときは)、
GNUの　sh-utils　をインストールすれば、出来ます。
